Why we steam ube matcha slowly

June 21, 2026
Ube matcha is the drink people ask about most. It looks like a sunset poured into a glass — lavender on top, deep violet at the bottom — and tastes like a quieter version of a holiday morning.

The slow part

Most matchas can be whisked quickly. Ube prefers patience. We sift the matcha twice, bloom it with a small splash of hot water, and stir until it’s the texture of cream silk before any milk goes in.
“If a drink is worth ordering, it’s worth pouring slowly.”
— Selene

What goes in

  • Ceremonial-grade matcha
  • House ube syrup, simmered with vanilla
  • Oat milk (or whole, your call)
  • A small honey drizzle on top — optional, lovely
It’s not about being fancy. It’s about giving the drink a moment to become itself before we hand it to you.
